Chicken curry salad

  • 1 chicken fillet
  • 1 onion
  • 1 tbspn olive oil
  • 1 tspn curry powder
  • 1 tspn ground coriander
  • 1 tspn ground cumin
  • 5 tbspn mayonnaise
  • 2 tbspn pineapple juice
  • 1 red bell pepper
  • 1 celery stick
  • 1 apple
  • 100 gr garden peas
  • 1 tbspn fresh parsley
  1. Dice the chicken and onion. Stir fry until cooked.
  2. Add the curry powder, ground coriander, ground cumin and seasoning to taste. CXook for a minute until fragrant.
  3. Transfer to a bowl and mix with the pineapple juice and mayonnaise.
  4. Dice the celery and bell pepper and add to the salad.
  5. Dice the apple and add to the salad.
  6. Blanch the garden peas until cooked, drain and add to the salad.
  7. Taste for seasoning and dress the salad just before serving. Garnish with the fresh parsley.
Stuff to know
This salad can be made a day in advance.
The more pineapple juice you use, the sweeter and softer the salad will be.
Add some raisins to the salad.
