Chicken in Yellow Bean Sauce

Ingredients
- 2 chicken breasts
- 1 tspn five-spice
- 2 peppers
- 2 cloves of garlic
- 1 onion
- 1 carrot
- 2 tbspn yellow bean paste
- 1 tbspn sweet soy sauce
- 1 tbspn sweet chilli sauce
- 2 tspn corn flour
- 3 tbspn water
- 2 tbspn olive oil
- 50 gr peanuts
Instructions
- Cut the chicken into thin, even strips. Dice peppers, garlic and onion.
- Add the oil to the pan and stir fry the chicken for 2 - 3 minutes until brown on all sides. Add the peppers, garlic, carrot and onion and cook until almost done.
- Stir in the yellow bean sauce, five-spice, sweet soy sauce sweet chilli sauce. Stir over a medium heat until the chicken is cooked through, the vegetables are tender and the sauce is thickened.
- If need be, mix the corn flour with water until smooth, then add to the sauce and cook until the sauce has thickened.
- Add the peanuts and serve with boiled rice.
Stuff to know
Replace chicken by duck.
Serve with an Asian red cabbage coleslaw
Do not overcook the chicken.
The amount of cornstarch you use will influence the thickness of the sauce.
